Ground Pork Patties
Tortitas de CerdoGround pork seasoned somewhat like the green chorizo made in the city of Toluca, and formed into patties, makes terrific tortas (sandwiches) paired with guacamole. The patties are also good for an informal dinner with beans and a salad, or for breakfast with scrambled eggs or pancakes.
Ingrediënten
Makes 8 patties
- 1 pound ground pork
- 1 medium garlic clove pressed
- 1 serrano chile finely chopped with seeds
- ½ teaspoon dried oregano Mexican variety preferred, crumbled
- ¼ teaspoon dried thyme
- ¼ teaspoon ground cumin
- ¼ teaspoon ground allspice
- 2 tablespoons chopped fresh cilantro
- 1 teaspoon unseasoned rice vinegar
- ½ teaspoon salt or to taste
- ⅛ teaspoon freshly ground pepper or to taste
- 2 teaspoons vegetable oil or olive oil
Instructies
- Put all of the ingredients, except the oil, into a mixing bowl.
- Mix very well with clean hands.
- Cover and refrigerate, to season, at least 2 hours, or up to overnight.
- Form into 8 patties.
- Heat the oil in a large nonstick skillet, and cook the patties about 4 minutes per side or until browned on the outside and no longer pink inside.
