Ingrediënten
- 300 g dried red lentils picked and rinsed
- 225 g stewing beef cubed
- 2 celery sticks finely chopped
- 1 leek finely chopped
- 3 large carrots finely chopped
- 2 onions finely chopped
- 2 tablespoons plain flour
- 1 tablespoon vegetable oil
- 50 ml dry white wine
- 1.8 litres water
Instructies
Lentil Baptism:
- Bring 1.8 litres/3pt of water to a boil in a large heavy saucepan.
- Add the dried red lentils, stewing beef cubes, finely chopped leek, carrots, and celery.
- Return to the boil, then reduce the heat, cover the pan, and simmer for 40 minutes.
Beef Transformation:
- Remove the beef cubes, drain them on kitchen paper, and brown them in vegetable oil in a frying pan over high heat.
Onion Sauté:
- In the same pan, sauté the finely chopped onions for 15 minutes, stirring frequently.
Flour Alchemy:
- Sprinkle plain flour over the onions and stir with a wooden spoon until the flour browns.
Harmonious Fusion:
- Pour 225ml/8fl oz of the lentil mixture over the onions and stir vigorously.
- Add the dry white wine and cook for an additional 1 minute.
Savory Union:
- Tip the contents of the frying pan back into the lentil mixture.
- Simmer for 30 minutes before serving.
