Ingrediënten

  • 300 g dried red lentils picked and rinsed
  • 225 g stewing beef cubed
  • 2 celery sticks finely chopped
  • 1 leek finely chopped
  • 3 large carrots finely chopped
  • 2 onions finely chopped
  • 2 tablespoons plain flour
  • 1 tablespoon vegetable oil
  • 50 ml dry white wine
  • 1.8 litres water

Instructies

Lentil Baptism:

  • Bring 1.8 litres/3pt of water to a boil in a large heavy saucepan.
  • Add the dried red lentils, stewing beef cubes, finely chopped leek, carrots, and celery.
  • Return to the boil, then reduce the heat, cover the pan, and simmer for 40 minutes.

Beef Transformation:

  • Remove the beef cubes, drain them on kitchen paper, and brown them in vegetable oil in a frying pan over high heat.

Onion Sauté:

  • In the same pan, sauté the finely chopped onions for 15 minutes, stirring frequently.

Flour Alchemy:

  • Sprinkle plain flour over the onions and stir with a wooden spoon until the flour browns.

Harmonious Fusion:

  • Pour 225ml/8fl oz of the lentil mixture over the onions and stir vigorously.
  • Add the dry white wine and cook for an additional 1 minute.

Savory Union:

  • Tip the contents of the frying pan back into the lentil mixture.
  • Simmer for 30 minutes before serving.
