Hearty Meatball and Pasta Soup

- 14-1/2 oz. can petite diced tomatoes
- 6 oz. can tomato paste
- 1 to 1-1/2 cups onion chopped
- 4 14-1/2 oz. cans beef broth
- 2 cups water
- 32 oz. package frozen meatballs
- 1-1/2 cups orzo ditalini, or other small pasta, uncooked
- Salt and pepper to taste
Garnish:
- Grated Parmesan cheese
Instructies
- In a large stockpot over medium heat, mix together diced tomatoes, tomato paste, chopped onion, beef broth, water, frozen meatballs, uncooked pasta, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to medium-low.
- Cook the soup, stirring occasionally, for 20 minutes or until the pasta is tender and the meatballs are warmed through.
- Garnish each serving of Hearty Meatball and Pasta Soup with grated Parmesan cheese.
