- ¾ teaspoon salt
- 2 teaspoons dried parsley flakes
- 8 large eggs
- 1 medium onion finely chopped
- 1 ½ cups red potatoes finely chopped
- 6 diced bacon strips
- ½ pound beef sausage
Instructies
- In a large ovenproof skillet, cook the sausage until its color changes from pink.
- Remove from heat and set aside.
- In the same skillet, cook bacon until crispy.
- Using a slotted spoon, transfer bacon to paper towels to drain, and reserve 2 tablespoons of drippings.
- In the reserved bacon drippings, sauté onions and potatoes until softened.
- In a large bowl, whisk together pepper, salt, parsley, and eggs.
- Return bacon and sausage to the skillet, then pour the egg mixture over the top.
- Cover and cook over low heat until the eggs are set, approximately 6 to 8 minutes.
- Uncover the skillet and broil the frittata 6 inches from the flame until the eggs are fully set, about 3 minutes.
- Cut the frittata into wedges and serve.
