  • teaspoon pepper
  • ¾ teaspoon salt
  • 2 teaspoons dried parsley flakes
  • 8 large eggs
  • 1 medium onion finely chopped
  • 1 ½ cups red potatoes finely chopped
  • 6 diced bacon strips
  • ½ pound beef sausage

Instructies

  • In a large ovenproof skillet, cook the sausage until its color changes from pink.
  • Remove from heat and set aside.
  • In the same skillet, cook bacon until crispy.
  • Using a slotted spoon, transfer bacon to paper towels to drain, and reserve 2 tablespoons of drippings.
  • In the reserved bacon drippings, sauté onions and potatoes until softened.
  • In a large bowl, whisk together pepper, salt, parsley, and eggs.
  • Return bacon and sausage to the skillet, then pour the egg mixture over the top.
  • Cover and cook over low heat until the eggs are set, approximately 6 to 8 minutes.
  • Uncover the skillet and broil the frittata 6 inches from the flame until the eggs are fully set, about 3 minutes.
  • Cut the frittata into wedges and serve.
