- 5 medium zucchini
- ¼ c. brown rice uncooked
- ½ c. boiling water
- 1 small onion chopped finely
- 1 clove garlic minced
- ½ c. parsley chopped finely
- ¼ c. olive oil
- ½ c. bread crumbs
- 1 lemon juiced
- 1 egg separated
- 1 c. mushrooms chopped finely (optional)
- ½ c. cheddar cheese grated
- Salt and pepper
Instructies
- Preheat the oven to 350°F (175°C).
- Wash the zucchini and cut off the ends.
- Carefully hollow out the zucchini with a spoon, leaving a shell about 1/4-inch thick.
- Chop the scooped-out zucchini insides into small pieces.
- In a medium-sized saucepan, combine the uncooked rice, boiling water, chopped onion, minced garlic, salt, pepper, and olive oil.
- Cook for about 15 minutes, or until the water is absorbed.
- Add the chopped zucchini insides to the saucepan and cook for 5 more minutes.
- Remove the saucepan from the heat.
- Stir in the bread crumbs, chopped parsley, lemon juice, egg white, optional mushrooms, and grated cheddar cheese.
- Arrange the hollowed-out zucchini shells in a baking dish.
- Fill each zucchini shell with the prepared filling.
- Spread any extra filling around the shells in the bottom of the baking dish.
- Cover the dish with foil and bake for about 40 minutes, or until the zucchini is tender.
