  • 5 medium zucchini
  • ¼ c. brown rice uncooked
  • ½ c. boiling water
  • 1 small onion chopped finely
  • 1 clove garlic minced
  • ½ c. parsley chopped finely
  • ¼ c. olive oil
  • ½ c. bread crumbs
  • 1 lemon juiced
  • 1 egg separated
  • 1 c. mushrooms chopped finely (optional)
  • ½ c. cheddar cheese grated
  • Salt and pepper

Instructies

  • Preheat the oven to 350°F (175°C).
  • Wash the zucchini and cut off the ends.
  • Carefully hollow out the zucchini with a spoon, leaving a shell about 1/4-inch thick.
  • Chop the scooped-out zucchini insides into small pieces.
  • In a medium-sized saucepan, combine the uncooked rice, boiling water, chopped onion, minced garlic, salt, pepper, and olive oil.
  • Cook for about 15 minutes, or until the water is absorbed.
  • Add the chopped zucchini insides to the saucepan and cook for 5 more minutes.
  • Remove the saucepan from the heat.
  • Stir in the bread crumbs, chopped parsley, lemon juice, egg white, optional mushrooms, and grated cheddar cheese.
  • Arrange the hollowed-out zucchini shells in a baking dish.
  • Fill each zucchini shell with the prepared filling.
  • Spread any extra filling around the shells in the bottom of the baking dish.
  • Cover the dish with foil and bake for about 40 minutes, or until the zucchini is tender.
