Herbed Roast Chicken
Equipment
Ingrediënten
- 1 whole chicken
- 1 onion –chopped
- 3 celery ribs – cut
- 4 carrots – cut
- ½ orange or 1 lemon – sliced
- Fresh thyme Or 1 tbsp dried thyme
- 4 garlic cloves – minced
- 1 tbsp kosher salt
- 2 tbsp olive oil
- 1 tsp black pepper
Instructies
Combine in crock pot:
- Onion
- Celery
- Carrots
- Combine in bowl:
- Garlic cloves
- Olive oil
- Salt & pepper
- Thyme
Spread mixture under the skin of chicken
- Stuff orange or lemon slices and fresh thyme under skin as well
- Roast on high for 3-4 hours
- Remove chicken and serve
- Add 2 cups of water to crock pot
- Cook on low for 8-10 hours
- Add bones after eating or storing chicken
- Strain liquid from crock pot and refrigerate
- Dump solids into trash
- After stock has cooled, remove hard fat from top and discard
- Freeze the stock or use it within a few days
