Homemade Beef Tortillas

Equipment

  • 1 large frying pan
  • aluminum foil ,or dampened paper towels for warming tortillas,
  • 1 baking dish

Ingrediënten

  • 1 lb ground beef
  • 8 tortillas corn or flour
  • 1 onion chopped
  • 2 cloves garlic crushed
  • 1 cup frozen corn
  • ½ can 14-16 oz tomato sauce
  • 4 tablespoons fresh parsley chopped
  • Salt and pepper to taste

Optional:

  • oregano
  • cumin
  • chili powder
  • coriander

Instructies

Preheat Oven:

  • Preheat the oven to 300°F (150°C).
  • Brown Ground Beef: In a large frying pan, crumble the ground beef and add the chopped onion.
  • Saute over medium heat, stirring frequently, until the beef is browned and the onion is softened, about 10-15 minutes.
  • Drain any excess grease from the pan.

Add Tomato Sauce and Seasonings:

  • To the browned beef and onion mixture, add the crushed garlic, tomato sauce, and salt and pepper to taste.
  • Cook until the mixture thickens slightly, about 10 minutes.

Stir in Frozen Corn:

  • Stir in the frozen corn and cook for an additional 2-3 minutes until the corn is heated through.
  • Remove the pan from the heat.

Warm Tortillas:

  • Warm the tortillas in the microwave (wrapped in dampened paper towels) or in the oven (wrapped in foil) for a few minutes to make them pliable.

Assemble Tortillas:

  • Place a portion of the beef mixture onto each tortilla.
  • Sprinkle with chopped fresh parsley and any additional spices if desired.

Roll Up Tortillas:

  • Roll up each tortilla tightly, folding in the sides as you go to enclose the filling.
  • Bake: Place the rolled-up tortillas in a baking dish and bake in the preheated oven for about 5-10 minutes to warm through.

Serve:

  • Serve the beef tortillas hot, garnished with extra parsley if desired.
