Homemade Sweet Potato Hash Browns

Ingrediënten

  • 1 teaspoon butter or margarine
  • 2 tablespoons vegetable oil divided
  • 1 medium onion finely diced
  • 1 tablespoon light brown sugar
  • 1 medium baking potato peeled and shredded
  • 1 medium sweet potato peeled and shredded
  • 1 large egg lightly beaten
  • 3 tablespoons all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 4 slices of cooked bacon crumbled

Instructies

  • In a large nonstick skillet, melt the butter and 1 tablespoon of vegetable oil over medium heat.
  • Add the finely diced onion and sauté for about 15 minutes or until it becomes golden.
  • Add the brown sugar and continue to cook for an additional 5 minutes, stirring frequently.
  • In a large bowl, combine the sautéed onion, shredded baking potato, shredded sweet potato, lightly beaten egg, all-purpose flour, salt, pepper, and crumbled bacon.
  • Mix everything together until well combined.
  • In the same skillet, heat the remaining 1 tablespoon of vegetable oil over medium-high heat.
  • Drop ¼-cup portions of the potato mixture into the skillet for each hash brown pancake.
  • Flatten them with a spatula and cook the pancakes in batches for about 5 minutes on each side or until they turn golden brown and crispy.
