Honey Mustard Chicken Skewers

Chicken, vegetables and honey mustard: who needs a drive-through when this healthy, delicious meal can be ready in about 30 minutes with minimal prep.

  • 450 grams boneless skinless chicken thighs, cut into 3cm cubes
  • ½ cup Low-Carb Honey Mustard
  • ½ medium red onion peeled and chopped into 3cm pieces
  • 1 medium green capsicum seeded and chopped into 3cm pieces
  • 1 ½ tablespoons chopped fresh parsley

Instructies

  • In a medium bowl, combine chicken cubes and honey mustard.
  • Refrigerate covered for 30 minutes.
  • Preheat air fryer at 180°C for 3 minutes.
  • Skewer chicken and vegetables alternately on eight skewers and place half of skewers on a kebab rack.
  • Place rack in air fryer basket and cook for 12 minutes.
  • Transfer cooked kebabs to a large serving dish.
  • Repeat cooking with remaining skewers.
  • Garnish with fresh parsley and serve warm.
