Ingrediënten
- 1 cup wheat berries uncooked
- 1 can 15 oz chickpeas, drained and rinsed
- 1 can 14.5 oz diced tomatoes
- 1 onion diced
- 2 carrots peeled and sliced
- 3 garlic cloves minced
- 2 teaspoons dried oregano
- 1 teaspoon dried basil
- 1 teaspoon ground cumin
- ¼ cup olive oil
- 4 cups vegetable broth
- Salt and pepper to taste
- Fresh parsley for garnish optional
Instructies
- In a large skillet, heat olive oil over medium heat and sauté onions, carrots, and garlic until softened, about 5 minutes.
- Add the sautéed vegetables to the crockpot.
- Add wheat berries, chickpeas, diced tomatoes, vegetable broth, oregano, basil, cumin, salt, and pepper to the crockpot.
- Stir to combine the ingredients.
- Cover and cook on low for 6 hours, or until the wheat berries are tender.
- Once cooked, taste and adjust seasoning if necessary.
