Korean-Style Loaded Burgers with Kimchi Slaw

For the Burger:

  • 1 tablespoon brown sugar
  • 2 tablespoons soy sauce
  • ¼ cup gochujang chile paste
  • 2 cloves garlic crushed
  • 2 teaspoons finely grated ginger
  • 1 ½ pounds ground beef
  • 1 egg
  • ¾ cup packaged dry bread crumbs
  • 2 tablespoons barbecue sauce of your choice
  • Cooking spray
  • 4 slices cheddar cheese
  • 4 large brioche buns
  • cup mayonnaise

For the Kimchi Slaw:

  • ¼ cup finely shredded kimchi
  • 2 teaspoons rice wine vinegar
  • 2 teaspoons vegetable oil
  • 2 teaspoons sesame oil
  • 2 cups shredded cabbage
  • cup fresh mint leaves

Instructies

  • Begin by preheating a 5- or 6-quart air fryer to 350°F for 3 minutes.
  • In a mixing bowl, combine the brown sugar, soy sauce, garlic, ginger, and all but 1 teaspoon of the chile paste.
  • Add the ground beef, egg, and bread crumbs, then mix well.
  • Shape the mixture into four patties, ensuring they match the size of the brioche buns.
  • Brush each patty with barbecue sauce.
  • Carefully pull out the air-fryer pan and basket and apply cooking spray to the basket.
  • Place the patties in the basket and slide it back into the appliance.
  • Set the temperature to 350°F and the timer to 6 minutes.
  • Cook the patties, turning them halfway through, until they are thoroughly cooked.
  • Top each burger with a slice of cheddar, and let the patties sit in the turned-off appliance for 1 minute to melt the cheese.
  • While the cheese is melting, make the Kimchi Slaw.
  • In a large bowl, combine the finely shredded kimchi, rice wine vinegar, vegetable oil, and sesame oil.
  • Add the shredded cabbage and mint leaves, and toss everything together.
  • To serve, split and toast the brioche buns.
  • Spread the bases with a mixture of mayonnaise and the remaining 1 teaspoon of chile paste.
  • Top with the cooked patties, kimchi slaw, and bun tops.

Notes / Tips / Wine Advice:

Gochujang is a Korean fermented red chile paste that you can find in larger supermarkets and Asian food stores. If you prefer, you can substitute it with your favorite chili sauce, adjusting the amount to your desired level of spiciness.
For the slaw, you can use any cabbage mix you like, including coleslaw mixes.
You can prepare the patties up to the end of step 2 a day in advance, just refrigerate them until needed.
