Lemon-Pepper Chicken Drumsticks
Drumsticks are my favorite part of the chicken: rich and moist from the dark meat and perfect for handheld eating. Growing up, my grandmother would shower store-bought lemon-pepper seasoning on fried chicken, and it hit all the salty, savory flavor notes perfectly. For this updated version, I take a cue from the air-frying technique for my Spicy Dry-Rubbed Chicken Wings and rub the drumsticks with baking powder along with pepper and garlic powder. Once air fried and crispy, I shower them with fresh lemon zest, adding brightness to cut through the crunchy skin and rich meat.
Ingrediënten
- 2 teaspoons freshly ground coarse black pepper
- 1 teaspoon baking powder
- ½ teaspoon garlic powder
- 4 chicken drumsticks 4 ounces each
- Kosher salt
- 1 lemon
Instructies
- In a small bowl, stir together the pepper, baking powder, and garlic powder.
- Place the drumsticks on a plate and sprinkle evenly with the baking powder mixture, turning the drumsticks so they’re well coated.
- Let the drumsticks stand in the refrigerator for at least 1 hour or up to overnight.
- Sprinkle the drumsticks with salt, then transfer them to the air fryer, standing them bone-end up and leaning against the wall of the air fryer basket.
- Cook at 375°F until cooked through and crisp on the outside, about 30 minutes.
- Transfer the drumsticks to a serving platter and finely grate the zest of the lemon over them while they’re hot.
- Cut the lemon into wedges and serve with the warm drumsticks.
