Lentil and Sweet Potato Stew
Ingrediënten
- 1¼ cups lentils
- 6 cups chicken or vegetable broth
- 1 onion quartered
- 2 cloves garlic minced
- 1 bay leaf
- ½ tsp. turmeric
- ½ tsp. ground cumin
- ½ tsp. ginger
- 1 tsp. dried parsley
- 2 carrots peeled and sliced
- 2 sweet potatoes peeled and cubed
- 2 T. tomato paste
Instructies
- Rinse and drain lentils, picking out any debris as you do so.
- Put in a stockpot and add the remaining ingredients.
- Bring to a boil; reduce heat and simmer until the lentils are cooked and the sweet potatoes are tender.
- If the stew starts to get too dry, cover with a lid to finish cooking.
