- 2 cups 250 g all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- ½ teaspoon ground nutmeg
- 1 cup 220 g firmly packed brown sugar
- ¼ cup 60 ml pure maple syrup
- ¾ cup 168 g nondairy butter, softened
- ¾ cup 170 g nondairy yogurt
- ¼ cup 60 ml soy or other nondairy milk
- 1 teaspoon pure vanilla extract
- 1 cup 142 g chopped, pitted dates
- 1 cup 120 g pine nuts
Instructies
- Preheat the oven to 350°F (180°C, or gas mark 4).
- Lightly coat a 9 × 13-inch (23 × 33-cm) baking dish with nonstick cooking spray.
- In a large mixing bowl, combine the flour, baking soda, cinnamon, salt, and nutmeg.
- In a medium mixing bowl, mix together the brown sugar, maple syrup, nondairy butter, yogurt, milk, and vanilla extract until smooth.
- Gently fold the wet ingredients into the dry ingredients.
- Do not overmix.
- Fold in the chopped dates and pine nuts.
- Spread the batter evenly in the prepared baking dish.
- Bake for 25 to 30 minutes, or until the edges are golden brown and the center is set.
- Remove from the oven and place the baking dish on a wire rack.
- Let cool in the pan for 15 minutes.
- Transfer to the wire rack to cool completely before slicing into 24 bars.
