Ingrediënten

  • 1 cup 147 g packed light brown sugar
  • 1 cup 226 g unsweetened applesauce
  • 2 teaspoons pure almond extract
  • 2 teaspoons rose water
  • ½ cup 120 ml canola oil
  • ¼ cup 60 ml unsweetened soy or other nondairy milk
  • cups 240 g brown rice flour
  • ½ cup 60 g whole wheat pastry flour
  • 4 teaspoons 16 g matcha green tea powder
  • 1 tablespoon 8 g arrowroot powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon fine sea salt
  • 1 cup 92 g salted, dry-roasted almonds, coarsely chopped

Instructies

  • Preheat the oven to 350°F (180°C, or gas mark 4).
  • Line a standard muffin tin with paper liners.
  • In a medium-size bowl, whisk together the light brown sugar, applesauce, almond extract, rose water, canola oil, and soy milk until smooth.
  • In a large-size bowl, sift together the brown rice flour, whole wheat pastry flour, matcha powder, arrowroot powder, baking powder, baking soda, and salt.
  • Carefully fold the wet ingredients into the dry, being careful not to overmix.
  • Gently fold in the coarsely chopped almonds.
  • Divide the batter evenly among the muffin cups.
  • Bake for 18 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool completely on a cooling rack before serving.
