Mexican Corn on the Cob

Fresh ears of corn on the cob are cooked in steaming tubs of boiling water and sold by street venders all over Mexico. The corn is painted with mayonnaise and coated with cheese and a sprinkling of chili powder. Try this popular street snack at home.

Ingrediënten

Makes 4 servings

  • 4 large ears fresh corn shucked (save 4 large leaves)
  • ¼ cup mayonnaise
  • 1 teaspoon fresh lime juice
  • ½ cup finely shredded cotija or mild feta cheese
  • 1 tablespoon purchased chili powder

Instructies

  • Bring a large pot of water to a boil.
  • Cook the corn until tender, about 5 minutes.
  • While the corn cooks, mix the mayonnaise and lime juice in a small bowl.
  • Drain the corn.
  • Brush the hot cooked corn with mayonnaise and sprinkle with cheese and chili powder.
  • Serve each ear of corn hot, placed on top of a fresh corn leaf.
