Mushroom Barley & Parsley Chowder

Equipment

Ingrediënten

  • 1 lb mushroom – thinly sliced
  • 1 garlic clove – minced
  • 1 onion – finely chopped
  • 2 tbsp sweet Hungarian paprika
  • 14 ½ oz can tomatoes
  • 14 ½ oz can beef broth
  • ½ cup water
  • ½ cup pearl barley – rinsed and drained
  • 1 tbsp red wine vinegar
  • ½ cup parsley – finely chopped
  • Salt & pepper

Instructies

Combine in slow cooker in the following order:

  • Mushrooms
  • Garlic
  • Onion
  • Paprika
  • Tomatoes with liquid
  • Broth
  • Water
  • Barley
  • Vinegar
  • Salt & pepper
  • Cook at low 6-7 hours
  • Before serving add parsley and stir

Notes / Tips / Wine Advice:

Serves 4-6 | Total time: 6 hrs 20 mins
Variation
Add 1 1b of lean ground beef. Cook ground beef with 1 tsp garlic powder, 1 tsp onion powder, and 1 tsp Cajun spice and add to crock pot. Also add 1 tbsp Cajun spice, one 4 ounce tin of diced green chilies, 1 finely chopped and seeded jalapeno, and smoked paprika instead of sweet Hungarian paprika. Increase beef stock to 2 cups and cook on low for 7 hours.
