Mushroom Barley & Parsley Chowder

- 1 lb mushroom – thinly sliced
- 1 garlic clove – minced
- 1 onion – finely chopped
- 2 tbsp sweet Hungarian paprika
- 14 ½ oz can tomatoes
- 14 ½ oz can beef broth
- ½ cup water
- ½ cup pearl barley – rinsed and drained
- 1 tbsp red wine vinegar
- ½ cup parsley – finely chopped
- Salt & pepper
Instructies
Combine in slow cooker in the following order:
- Mushrooms
- Garlic
- Onion
- Paprika
- Tomatoes with liquid
- Broth
- Water
- Barley
- Vinegar
- Salt & pepper
- Cook at low 6-7 hours
- Before serving add parsley and stir
Notes / Tips / Wine Advice:
Serves 4-6 | Total time: 6 hrs 20 mins
Variation
Add 1 1b of lean ground beef. Cook ground beef with 1 tsp garlic powder, 1 tsp onion powder, and 1 tsp Cajun spice and add to crock pot. Also add 1 tbsp Cajun spice, one 4 ounce tin of diced green chilies, 1 finely chopped and seeded jalapeno, and smoked paprika instead of sweet Hungarian paprika. Increase beef stock to 2 cups and cook on low for 7 hours.
