Nutmeg and White Chocolate Bliss Bars

Ingrediënten

  • Nonstick cooking spray
  • 2 cups all-purpose flour
  • 2 teaspoons freshly grated nutmeg or 1 teaspoon ground nutmeg
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • 2 cups packed brown sugar
  • cup butter
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • ¾ cup dried cranberries
  • 1 ½ cups fresh or thawed frozen cranberries
  • 3 ounces white baking chocolate coarsely chopped

Preparation Time: 25 minutes / Baking Time: 40 minutes at 350°F

Instructies

  • Preheat your oven to 350°F.
  • Line a 13×9-inch baking pan with foil, extending the foil over the edges for easy removal, and lightly coat the foil with nonstick cooking spray.
  • In a medium bowl, combine the all-purpose flour, freshly grated nutmeg (or ground nutmeg), baking powder, and baking soda.
  • In a medium saucepan, combine the brown sugar and butter.
  • Cook and stir over medium heat until the mixture is completely melted and smooth.
  • Allow it to cool slightly.
  • Stir in the eggs one at a time, beating well after each addition.
  • Mix in the vanilla extract.
  • Gently fold in the flour mixture, being careful not to overmix.
  • Add the dried cranberries and spread the batter into the prepared pan.
  • Sprinkle the fresh or thawed cranberries evenly over the top.
  • Bake for 40 minutes or until a toothpick inserted comes out clean.
  • Remove from the oven and immediately sprinkle the top with the coarsely chopped white chocolate.
  • Let it cool in the pan on a wire rack.
  • Using the foil overhangs, lift the uncut bars from the pan and then cut them into individual bars.

Yields: 24 servings (1 bar each)
Storage:
