Nutty Pumpkin Mug Cake
Enjoy this spiced dessert beside the fireplace on a cool autumn night — or wherever and whenever the craving hits! This would be delicious topped with some fresh whipped cream or a scoop of sugar-free ice cream.

- 1 large egg
- ¾ tablespoon coconut flour
- ¾ tablespoon almond flour
- 1 ½ tablespoons thickened whipping cream
- 1 ½ tablespoons erythritol sweetener
- 2 teaspoons pumpkin pie spice see note below
- ¼ teaspoon maple extract
- ¼ teaspoon baking powder
- 1 ½ tablespoons chopped walnuts
- ⅛ teaspoon salt
Instructies
- Preheat air fryer at 150°C for 3 minutes.
- In a small bowl, whisk egg together with remaining ingredients.
- Pour batter into a 10cm ramekin greased with cooking spray.
- Place ramekin in air fryer basket and cook for 25 minutes.
- Remove ramekin from basket and let set for 5 minutes.
- Serve warm.
