This salad tastes just as delicious if you substitute baby spinach leaves for the salad greens. Serve this salad with a simple chicken entree, such as the Chicken Breasts with Brandy and Mustard Sauce

Ingrediënten

  • 4 cups mixed salad greens
  • 2 large seedless oranges peeled and sliced horizontally 1/4-inch thick
  • 4 radishes trimmed and sliced 1/8-inch thick
  • 2 tablespoons orange juice
  • 4 teaspoons red wine vinegar
  • 2 teaspoons honey
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Instructies

  • Arrange the salad greens on a serving platter.
  • Top with the orange and radish slices.
  • Stir together the orange juice, vinegar, and honey in a cup, blending well to dissolve the honey.
  • Add the olive oil, salt, and pepper.
  • Drizzle the dressing over the vegetables and serve immediately, so the salad greens won’t wilt.
