Parmesan Turkey Cutlets
Turkey tenderloins are small strips of the breast. Look for them with fresh turkey products in the meat case.
Ingrediënten
Makes 4 to 6 servings / Prep: 25 min., Cook: 4 min.
- ⅔ cup Italian-seasoned breadcrumbs
- ⅔ cup grated Parmesan cheese
- 1 teaspoon paprika
- ½ teaspoon pepper
- 2 turkey breast tenderloins about 1½ pounds
- Olive oil
Instructies
- Combine first 4 ingredients; set aside.
- Cut tenderloins into 1-inch-thick slices.
- Place between 2 sheets of heavy-duty plastic wrap, and flatten to ¼-inch thickness, using a meat mallet or rolling pin.
- Brush both sides of turkey with olive oil; dredge in breadcrumb mixture.
- Cook half of turkey slices in 2 tablespoons hot olive oil in a large nonstick skillet over medium-high heat 1 minute on each side or until done.
- Repeat procedure with remaining turkey and oil.
