Pesto Sauce

  • cup pine nuts
  • 2 garlic cloves
  • 4 cups fresh basil leaves
  • ½ cup olive oil
  • ½ cup grated Parmesan cheese
  • 1 tablespoon freshly squeezed lemon juice from 1 small lemon
  • Kosher salt

Instructies

  • In a food processor, pulse the pine nuts and garlic until finely chopped.
  • Add the basil and olive oil and process until a paste forms.
  • Add the cheese and lemon juice, and season with salt.
  • Process until smooth.

Notes / Tips / Wine Advice:

Pesto is a great sauce to prepare and keep in your freezer for last-minute pesto needs. Just make sure to store it in an airtight container with a glug of olive oil on top (this keeps the surface from oxidizing). Press some plastic wrap on top of the olive oil and seal the container. Store in the freezer for up to 6 months.
The lemon juice brightens the pesto sauce. If you aren’t a fan or would rather have a traditional pesto, leave the lemon juice out.
