Pickled Fruits and Veggies
A tangy and crunchy combination of fruits and veggies, perfect for adding to salads, sandwiches, or serving as a relish without the high-fructose corn syrup.

Ingrediënten
- 1¼ cups 160 g chopped carrot
- ½ cup 80 g chopped red onion
- 2¼ cups 270 g diced celery
- â…“ cup 53 g chopped raisins
- â…“ cup 59 g chopped dates
- 1 teaspoon dried thyme
- â…” cup 160 ml apple cider vinegar
- ¼ teaspoon ground cinnamon
Instructies
- Combine the diced celery, chopped carrot, chopped red onion, chopped dates, raisins, thyme, apple cider vinegar, and cinnamon in a medium-size saucepan.
- Bring the mixture to a boil over medium heat.
- Once boiling, cover the saucepan, reduce the heat, and let it simmer for 20 minutes.
- Remove from heat and let it cool before using.
- Store in an airtight container and refrigerate for up to 2 weeks.
