Ingrediënten

Makes 4 servings

  • Red Sesame Seed Sauce
  • 3 pork tenderloins about ¾ pound each, silver skin removed
  • ½ teaspoon salt or to taste
  • ¼ teaspoon freshly ground pepper or to taste
  • 1 teaspoon dried oregano Mexican variety preferred, crumbled
  • 1 tablespoon olive oil or vegetable oil
  • 1 tablespoon toasted sesame seeds optional
  • Cilantro sprigs

Instructies

  • Prepare the red sesame seed sauce.
  • Reserve in the pan off heat.
  • Preheat oven to 450°.
  • Rub the pork with salt, pepper, and oregano.
  • Heat the oil in a large nonstick skillet over medium-high heat.
  • Brown the pork on both sides, about 5 minutes total.
  • Transfer to a baking pan and roast until no longer pink inside, 18 to 20 minutes (155° to 160° on a meat thermometer).
  • Remove from the oven and let stand 6 to 8 minutes.
  • Reheat the sauce.
  • Slice the pork and serve with a portion of the sauce spooned over the meat.
  • Sprinkle with sesame seeds, if using, and garnish with cilantro.

Pass remaining sauce at the table.
