Pumpkin Roll

Ingrediënten

  • 3 eggs
  • ½ teaspoon nutmeg
  • 1 cup sugar
  • ½ teaspoon salt
  • 1 teaspoon lemon juice
  • nuts optional
  • heaping cup pumpkin

Frosting:

  • ¾ cup flour
  • 1 cup powdered sugar
  • 1 teaspoon baking powder
  • 8 oz. cream cheese softened
  • 1 teaspoon ginger
  • 4 tablespoons butter
  • 2 teaspoons cinnamon
  • ½ teaspoon vanilla

Instructies

  • Beat eggs for 5 minutes at high speed.
  • Combine with sugar, lemon juice, pumpkin, flour, baking powder, spices, and salt.
  • Sprinkle top of cake with chopped nuts, if desired.
  • Bake on a greased and floured jelly roll pan at 375º for 15 minutes.
  • Turn onto towel; sprinkle with powdered sugar.
  • Cool completely.
  • Mix frosting and spread on cake, then re-roll.
  • Chill, then wrap in plastic wrap.

Notes / Tips / Wine Advice:

This freezes well and can be cut while frozen.
