Ingrediënten
- 125 g quinoa
- 125 g radishes
- ½ pomegranate
- 2 tomatoes
- 125 g chicken breast
- 20 g pistachios
- 1 bunch parsley
- 2 ½ tbsp olive oil
- 2 tablespoons cider vinegar
- ½ teaspoon honey
- Salt
- pepper
Instructies
- Cook the quinoa according to the instructions on the packet.
- Roast the pistachios in a pan without fat.
- Wash the radishes and cut into thin slices.
- Remove the pomegranate seeds from the shell with a teaspoon.
- Wash tomatoes and dice finely.
- Wash and chop finelythe parsley.
- Wash the chicken, pat dry, cut into strips and fry in a pan with 1 tablespoon of olive oil.
- Mix the apple cider vinegar, honey, salt, pepper and 1 ½ tbsp olive oil.
- Mix the radishes, tomatoes, quinoa, parsley and chicken, top with pistachios and pomegranate seeds.
