Ingrediënten

  • 125 g quinoa
  • 125 g radishes
  • ½ pomegranate
  • 2 tomatoes
  • 125 g chicken breast
  • 20 g pistachios
  • 1 bunch parsley
  • 2 ½ tbsp olive oil
  • 2 tablespoons cider vinegar
  • ½ teaspoon honey
  • Salt
  • pepper

Instructies

  • Cook the quinoa according to the instructions on the packet.
  • Roast the pistachios in a pan without fat.
  • Wash the radishes and cut into thin slices.
  • Remove the pomegranate seeds from the shell with a teaspoon.
  • Wash tomatoes and dice finely.
  • Wash and chop finelythe parsley.
  • Wash the chicken, pat dry, cut into strips and fry in a pan with 1 tablespoon of olive oil.
  • Mix the apple cider vinegar, honey, salt, pepper and 1 ½ tbsp olive oil.
  • Mix the radishes, tomatoes, quinoa, parsley and chicken, top with pistachios and pomegranate seeds.
