Raisin Filled Cookies

Ingrediënten

  • 1 cup lard or vegetable shortening
  • 2 cups granulated sugar
  • 2 eggs beaten
  • 1 cup milk
  • 2 tsp. vanilla
  • 7 cups flour
  • 2 tsp. baking soda
  • 2 tsp. baking powder

Filling

  • 2 cups raisins chopped or ground
  • 1 cup sugar
  • 1 cup water
  • 2 Tbsp. flour
  • 1 Tbsp. lemon juice optional

Instructies

  • Cream shortening, sugar, and eggs together.
  • Blend eggs and milk.
  • Combine with creamed mixture.
  • Add vanilla.
  • Sift together dry ingredients and mix well.
  • Stir thoroughly into batter.
  • Chill dough in the refrigerator for several hours or overnight.
  • Roll to ¼” thickness on lightly floured board.
  • Cut out with round cutter.
  • Place 1 teaspoon of raisin filling on the top of each of half the cookies.
  • With a thimble make a hole in the middle of the remaining cookies (the hole will prevent the filling from cooking out between the cookie halves).
  • Place these cookies on top of the cookies with filling.
  • Do not press together.
  • Bake at 350° for 20 minutes on greased cookie sheets.

Filling

  • Combine all ingredients and bring to a boil, stirring constantly until thickened.
