Who knew you could prepare pasta in a microwave? What’s more, the simple, from-scratch sauce uses the perfectly ripe tomatoes of late summer—and doesn’t require any cooking. Whipped up fresh and fast and tossed with ricotta ravioli, it’s a flavorful send-off to the season

- 4 main-dish servings
- 1½ pounds ripe tomatoes chopped (4 cups)
- ½ cup packed fresh basil leaves chopped
- 3 tablespoons olive oil
- ÂĽ teaspoon freshly grated lemon peel
- ÂĽ teaspoon salt
- ÂĽ teaspoon ground black pepper
- 1 bag 13 to 16 ounces frozen cheese ravioli
- 2½ cups water
- ÂĽ cup freshly grated parmesan cheese
Instructies
- In large bowl, combine tomatoes, basil, oil, lemon peel, salt, and pepper.
- Let stand at room temperature at least 15 minutes or up to 30 minutes to blend flavors.
- Meanwhile, place ravioli in large bowl with water; cover with vented plastic wrap and microwave on High for 10 minutes or until cooked through, stirring once.
- Add hot pasta to tomato mixture and toss to coat.
- Sprinkle with Parmesan to serve.
