A Blenderful of Frozen Daiquiris
I would love to scoff at the frozen daiq but they’re too much fun to drink. For frozen cocktails, I use a rich syrup, preferably a gum arabic (I use one from Small Hand Foods), as it results in a better texture for the final cocktail.

- Serves about 6
- 1 cup rhum agricole preferred or Plantation 3 Star rum (more traditional)
- ½ cup gum syrup
- ¾ cup freshly squeezed lime juice
- 6 cups ice
- 6 lime rounds for garnish
Instructions
- In your blender, combine the rhum, syrup, lime juice, and ice.
- Blend on high speed until smooth.
- Divide among serving glasses and garnish with a lime.
- Serve.
