A Green Juice

Green juice is easily nutritious, but making it tasty can be a challenge. I find that the sweetness of apple and freshness of mint make this green juice one you’ll actually enjoy. I drink it for a healthy start to my morning during the month preceding Mardi Gras, when I abstain from the other drinks in this chapter (excluding coffee of course) or just to have some balance during the rest of the year. Feel free to use your juicer if you have one, but I prefer to use a blender to keep the fruits’ and vegetables’ natural fiber.

Equipment

Ingredients

  • Serves 2
  • 4 heaping tablespoons plain yogurt
  • 4 ribs celery cut into 1-inch pieces
  • 1 cucumber peeled, ends trimmed, and cut into 1-inch slices
  • 2 Granny Smith apples cored and quartered
  • ½- inch piece fresh ginger peeled
  • Large handful of spinach leaves long tough stems discarded
  • 12 mint leaves

Instructions

  • Combine the yogurt, celery, cucumber, apples, ginger, and ½ cup water in a blender and pulse until pureed.
  • Add the spinach and mint leaves and pulse until incorporated.
  • Serve.
