Aguja de Ternera
Veal in Puff PastryIf you have access to quality veal, you can enjoy these crispy puff pastries with a delicious veal filling. Aguja de Ternera is widely popular throughout Spain, and many places offer them ready-made.
Ingredients
Makes: 10 pastries
- 2¾ pounds puff pastry dough homemade or store-bought
- 1 recipe Veal Filling from Veal and Chorizo Turnovers [Tapas]
Instructions
- Prepare the pastry if necessary.
- Also, prepare the veal filling as directed in step 2 of the recipe.
- Place an oven rack in the upper-middle position and preheat the oven to 425°F (220°C).
- Roll out the pastry into 2 (25 x 15-inch) rectangles that are ⅛ inch thick.
- Cut each rectangle into 5 (5 x 3-inch) rectangles.
- Place 3 tablespoons of the veal filling along the length of each pastry rectangle.
- Fold up the sides and ends and press to seal.
- Place them seam side down on a cookie sheet.
- Bake for about 15 minutes or until they turn golden.

Serve the veal in puff pastry hot or at room temperature. Enjoy!
