  • 4 brioche buns halved
  • ¼ cup olive oil
  • 1 large red onion thinly sliced
  • 1 large red bell pepper thinly sliced
  • 2 cloves garlic crushed
  • ½ cup smoky barbecue sauce
  • 2 tsp smoked paprika
  • 4 portobello mushrooms sliced
  • 4 slices mozzarella cheese
  • Yellow mustard and sliced pickles for serving

Instructions

  • Begin by preheating your 5- or 6-quart air fryer to 350°F for 3 minutes.
  • Carefully pull out the air fryer pan and basket.
  • Place the brioche bun bases in the basket.
  • Slide the pan and basket back into the appliance, keeping the temperature at 350°F, and set the timer for 5 minutes.
  • Cook until the bun bases are toasted and golden.
  • Transfer the bun bases to a plate and cover to keep them warm.
  • Repeat this process with the bun lids.
  • In a bowl, combine 1 tablespoon of olive oil with the thinly sliced red onion and red bell pepper.
  • Line the basket with parchment paper and place the onion and pepper mixture in the basket.
  • Maintain the temperature at 350°F and set the timer for 10 minutes, or until the vegetables are softened.
  • Transfer the pepper mixture to a bowl and cover to keep it warm, then set aside the parchment paper.
  • Combine the remaining olive oil, crushed garlic, smoky barbecue sauce, and smoked paprika in the same bowl.
  • Add the sliced mushrooms and toss to combine.
  • Line the basket with the reserved parchment paper and place the mushroom mixture in the basket.
  • Reset the temperature to 400°F and set the timer for 10 minutes to cook until the mushrooms are browned and tender.
  • Transfer the mushroom mixture to a bowl and cover to keep it warm.
  • Place a slice of mozzarella on each bun base.
  • Then, place the bun bases in the basket.
  • Maintain the temperature at 400°F and set the timer for 2 minutes to cook until the mozzarella melts.
  • To serve, top the bun bases with the mushroom mixture, bell pepper mixture, and your desired amount of yellow mustard and sliced pickles.
  • Finish by placing the bun tops.
