Ingredients
For the Pie Shell:
- 1 cup almonds soaked and drained
- 1 cup dates pitted and sliced
- ½ teaspoon vanilla extract
For the Filling:
- 8 large strawberries
- 5 dates pitted and sliced
- 2 ripe bananas
- 1 tablespoon lemon juice
- 2 pints strawberries quartered
- ½ pint strawberries halved
Instructions
Prepare Pie Shell:
- In a food processor, combine soaked and drained almonds, sliced dates, and vanilla extract.
- Blend until the mixture forms a sticky dough-like consistency.
- Press the mixture evenly into the bottom and sides of a pie plate to form the pie shell.
Prepare Filling:
- In the same food processor (no need to wash), blend together the 8 large strawberries, sliced dates, ripe bananas, and lemon juice until smooth.
Combine Filling:
- Transfer the blended mixture into a mixing bowl.
- Add the quartered strawberries and gently stir to combine.
Assemble Pie:
- Pour the strawberry filling mixture into the prepared pie shell.
- Decorate the top of the pie with the halved strawberries.
Chill and Serve:
- Chill the pie in the refrigerator for at least 1 hour before serving.
