Alphabet Soup for Children

Mexican children, like children around the world, are fascinated by miniature letters of the alphabet, in pasta form, floating in their soup. They take delight in naming the letters that appear in their spoons before popping them into their mouths. The small amount of cumin adds a subtle, special flavor but won't startle young taste buds. Alphabet pasta should be available in most grocery stores.

Equipment

  • medium saucepa

Ingredients

Makes 2 to 3 servings

  • 2 teaspoons vegetable oil
  • 2 tablespoons minced white onion
  • ½ teaspoon cumin
  • 2 plum tomatoes peeled, seeded, and finely chopped
  • 2 cups canned fat-free reduced-sodium chicken broth
  • ¼ cup small alphabet pasta
  • ¼ teaspoon salt or to taste

Instructions

  • In a medium saucepan, heat the oil over medium heat and cook the onion and cumin until the onion softens, about 3 minutes.
  • Add the tomatoes, and cook, stirring, until the juices are absorbed and the mixture is nearly dry.
  • Add the chicken broth and bring to a boil.
  • Add the pasta and salt to the boiling broth and cook, uncovered, stirring to prevent sticking, until the pasta is tender, about 8 minutes.
