Ambrosia Conserve

Ingredients

  • 6 cups chopped fresh pineapple
  • Zest and juice from 2 oranges
  • 6 cups sugar
  • 1 cup coconut flaked
  • 1 cup chopped drained maraschino cherries

Instructions

  • In a large saucepan, combine pineapple with orange juice and zest.
  • Boil for 10 minutes, or until pineapple is soft.
  • Add sugar and boil hard for 15 minutes, stirring often.
  • Add coconut and cherries.
  • Boil for 5 more minutes.
  • Ladle into clean jars and process for 10 minutes in boiling-water bath.
