Apple Butter in the Oven
This is, admittedly, a short-cut procedure that fits better in small kitchens and homesteads than the outdoor apple-butter business demands.
One woman, who grew up helping to stir the cider for hours as it boiled down, discovered this method after much experimenting.
Ingredients
- 8 quarts thick applesauce
- 8 quarts fresh cider
- 4 cups brown sugar
- 1 tsp. salt
Instructions
- Make 8 quarts of thick applesauce.
- Place hot applesauce into the oven at 400°.
- Place cider in large kettle and boil until half has evaporated.
- Add cider to sauce in the oven.
- Allow oven door to stand slightly ajar so steam can escape.
- Stir occasionally.
- After about 2 hours add sugar and salt.
- Mix well.
- Allow about 2 more hours of cooking time until apple butter is the desired consistency, remembering to stir occasionally.
- Pour into jars.
- Process in a boiling-bath for 10 minutes.
