Apple-Cheddar Cornbread

Ingredients

Makes 9 servings

Prep: 10 min., Bake: 30 min.

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • ½ cup sugar
  • 1 large egg beaten
  • 1 cup milk
  • ¼ cup butter or margarine melted
  • 2 small tart red apples chopped
  • ½ cup 2 ounces shredded sharp Cheddar cheese

Instructions

  • Combine first 4 ingredients; make a well in center of mixture.
  • Combine egg, milk, and butter; add to dry ingredients, stirring just until moistened.
  • Stir in apple and cheese.
  • Place a well-greased 9-inch cast-iron skillet or 9-inch square pan in a 425° oven for 5 minutes or until hot.
  • Remove from oven; pour batter into hot skillet.
  • Bake at 425° for 25 minutes or until golden.
