Apple & Strawberry Crumble

Spiced Crumble Topping:
- 1 cup almond meal
- ¾ cup rolled oats
- 3 tsp ground ginger
- 1 tsp pumpkin pie spice
- 2 tbsp maple syrup
- 5 tbsp cold butter finely chopped
Fruit Filling:
- 8 ounces fresh strawberries
- 3 large red apples
- 1 tsp vanilla bean paste
- 2 tbsp orange juice
- 2 tbsp maple syrup
- ⅛ cup roasted flaked natural almonds
- Confectioner’s sugar and vanilla ice cream for serving
Instructions
- Start by making the Spiced Crumble Topping.
- In a medium bowl, combine the almond meal, rolled oats, ground ginger, pumpkin pie spice, maple syrup, and cold butter.
- Use your fingertips to rub the mixture together until it forms small clumps.
- Halve the strawberries and peel, core, and coarsely chop the apples.
- In a large bowl, combine the apples, strawberries, vanilla bean paste, orange juice, and maple syrup.
- Preheat your 5- or 6-quart air fryer to 350°F for 3 minutes.
- Grease four 4-inch ovenproof dishes, making sure they fit in the air fryer.
- Divide the fruit mixture among the dishes; note that the fruit will reduce during cooking.
- Carefully pull out the air fryer pan and basket.
- Place the prepared dishes in the basket and return the pan and basket to the appliance.
- Keep the temperature set at 350°F and set the timer for 10 minutes, or until the fruit is almost tender.
- Top the cooked fruit with the spiced crumble topping.
- Cover the dishes with foil and cook for an additional 10-15 minutes, or until the crumble is golden and the fruit is bubbling.
- Finish the dish by topping the crumbles with roasted flaked almonds and a dusting of confectioner’s sugar.
