Apple & Strawberry Crumble

For the Spiced Crumble Topping:
- 1 cup almond meal
- ¾ cup rolled oats
- 3 tsp ground ginger
- 1 tsp pumpkin pie spice
- 2 tbsp maple syrup
- 5 tbsp cold butter chopped finely
For the Filling:
- 8 ounces fresh strawberries halved
- 3 large red apples peeled, cored, and coarsely chopped
- 1 tsp vanilla bean paste
- 2 tbsp orange juice
- 2 tbsp maple syrup
- ¼ cup flaked natural almonds roasted
To Serve:
- Confectioner’s sugar
- Vanilla ice cream
Instructions
- Prepare the Spiced Crumble Topping:
- In a medium bowl, combine almond meal, rolled oats, ground ginger, pumpkin pie spice, maple syrup, and cold butter.
- Use your fingertips to rub the mixture together until it forms small clumps.
- Set aside.
- Prepare the Filling:
- In a large bowl, combine the coarsely chopped apples, halved strawberries, vanilla bean paste, orange juice, and maple syrup.
- Preheat and Prepare:
- Preheat a 5- or 6-quart air fryer to 350°F for 3 minutes.
- Grease four 4-inch ovenproof dishes, ensuring they will fit into the air fryer.
- Assemble the Crumbles:
- Divide the fruit mixture evenly among the prepared ovenproof dishes.
- Note that the fruit will reduce during cooking.
Air Fry the Fruit:
- Carefully place the dishes in the air fryer basket.
- Cook at 350°F for 10 minutes or until the fruit is almost tender.
Add the Crumble Topping:
- Evenly distribute the spiced crumble topping over the partially cooked fruit in each dish.
- Cover the dishes with foil.
Continue Air Frying:
- Return the covered dishes to the air fryer basket.
- Cook at 350°F for an additional 10-15 minutes or until the crumble topping turns golden, and the fruit is bubbling.
Serve:
- Garnish the crumbles with flaked roasted almonds and dust with confectioner’s sugar.
- Serve the warm crumbles with a scoop of vanilla ice cream.

You can freeze the uncooked spiced crumble topping for up to 3 months.
