Apple & Strawberry Crumble

    Spiced Crumble Topping:

    • 1 cup almond meal
    • ¾ cup rolled oats
    • 3 tsp ground ginger
    • 1 tsp pumpkin pie spice
    • 2 tbsp maple syrup
    • 5 tbsp cold butter finely chopped

    Fruit Filling:

    • 8 ounces fresh strawberries
    • 3 large red apples
    • 1 tsp vanilla bean paste
    • 2 tbsp orange juice
    • 2 tbsp maple syrup
    • cup roasted flaked natural almonds
    • Confectioner’s sugar and vanilla ice cream for serving

    Instructions

    • Start by making the Spiced Crumble Topping.
    • In a medium bowl, combine the almond meal, rolled oats, ground ginger, pumpkin pie spice, maple syrup, and cold butter.
    • Use your fingertips to rub the mixture together until it forms small clumps.
    • Halve the strawberries and peel, core, and coarsely chop the apples.
    • In a large bowl, combine the apples, strawberries, vanilla bean paste, orange juice, and maple syrup.
    • Preheat your 5- or 6-quart air fryer to 350°F for 3 minutes.
    • Grease four 4-inch ovenproof dishes, making sure they fit in the air fryer.
    • Divide the fruit mixture among the dishes; note that the fruit will reduce during cooking.
    • Carefully pull out the air fryer pan and basket.
    • Place the prepared dishes in the basket and return the pan and basket to the appliance.
    • Keep the temperature set at 350°F and set the timer for 10 minutes, or until the fruit is almost tender.
    • Top the cooked fruit with the spiced crumble topping.
    • Cover the dishes with foil and cook for an additional 10-15 minutes, or until the crumble is golden and the fruit is bubbling.
    • Finish the dish by topping the crumbles with roasted flaked almonds and a dusting of confectioner’s sugar.

    Serve with a scoop of vanilla ice cream.
    Tip:
    You can freeze the uncooked spiced crumble topping for up to 3 months. Enjoy your delicious homemade crumble!
