Applesauce Nut Bread

Ingredients

  • cups all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • ½ tsp. nutmeg
  • 1 cup rolled oats
  • ½ cup chopped walnuts
  • ½ cup raisins
  • cup shortening
  • ½ cup brown sugar
  • 2 eggs
  • 1 cup unsweetened applesauce
  • ½ cup milk

Instructions

  • Preheat the oven to 350°.
  • In a large mixing bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • Stir in the rolled oats, walnuts, and raisins.
  • In another bowl, cream together the shortening and brown sugar.
  • Add the eggs and beat until light and fluffy.
  • Blend in the applesauce and milk.
  • Add the creamed mixture to the dry ingredients and beat for 30 seconds.
  • Although the batter will be lumpy, don’t overbeat it.
  • Pour the batter into a large, greased loaf pan and bake for 50 to 60 minutes.
