Apricot-Chicken Salad

Apricot-Chicken Salad becomes an elegant entrée when served in stemmed dessert bowls and stacked on a glass cake stand. Fresh apricot slices and herb sprigs make up the garnish.

Ingredients

Makes 6 servings / Prep: 25 min.

  • ½ cup plain yogurt
  • ¼ cup mayonnaise
  • 3 tablespoons apricot preserves
  • 2 teaspoons grated fresh ginger
  • ½ teaspoon salt
  • ½ teaspoon freshly ground pepper
  • 3 cups chopped cooked chicken
  • 1 cup sliced almonds toasted
  • ¾ cup sliced celery
  • 1 6-ounce package dried apricots, chopped

Garnishes:

  • apricot fresh slices,
  • thyme fresh sprigs

Instructions

  • Whisk together first 6 ingredients in a large bowl; add chicken and next 3 ingredients, tossing gently.
  • Chill until ready to serve.
  • Garnish, if desired.
