Apricot-Chicken Salad
Apricot-Chicken Salad becomes an elegant entrée when served in stemmed dessert bowls and stacked on a glass cake stand. Fresh apricot slices and herb sprigs make up the garnish.
Ingredients

- ½ cup plain yogurt
- ¼ cup mayonnaise
- 3 tablespoons apricot preserves
- 2 teaspoons grated fresh ginger
- ½ teaspoon salt
- ½ teaspoon freshly ground pepper
- 3 cups chopped cooked chicken
- 1 cup sliced almonds toasted
- ¾ cup sliced celery
- 1 6-ounce package dried apricots, chopped
Garnishes:
- apricot fresh slices,
- thyme fresh sprigs
Instructions
- Whisk together first 6 ingredients in a large bowl; add chicken and next 3 ingredients, tossing gently.
- Chill until ready to serve.
- Garnish, if desired.
