Asparagus Scrambled Eggs
If you don’t fancy the addition of bacon, you can cook asparagus with eggs alone as well.
Ingredients
- 6 Asparagus Spears
- 2 Eggs
- 1 Tablespoon Olive Oil
- ¼ Cup Goat Cheese
- Salt and Pepper to Taste
Instructions
- Heat Olive Oil in a skillet and add in the trimmed asparagus until soft but not mushy.
- Break in eggs, one by one and begin to scramble.
- Season with salt and pepper and cook until done to your liking.
- Top with cheese and enjoy with break or on their own.
