Asparagus Scrambled Eggs

If you don’t fancy the addition of bacon, you can cook asparagus with eggs alone as well.

Ingredients

  • 6 Asparagus Spears
  • 2 Eggs
  • 1 Tablespoon Olive Oil
  • ¼ Cup Goat Cheese
  • Salt and Pepper to Taste

Instructions

  • Heat Olive Oil in a skillet and add in the trimmed asparagus until soft but not mushy.
  • Break in eggs, one by one and begin to scramble.
  • Season with salt and pepper and cook until done to your liking.
  • Top with cheese and enjoy with break or on their own.
