Avocado Sandwiches Deluxe

Stir up a pitcher of iced tea, and take these sandwiches out to the patio on a pretty day.

Ingredients

  • Makes 2 servings / Prep: 20 min.
  • 1 avocado cut into 8 wedges
  • ¼ cup Italian dressing
  • 1 tablespoon mayonnaise
  • 4 oatmeal or whole wheat bread slices toasted
  • 2 1-ounce processed American cheese slices
  • 4 thin tomato slices
  • ½ cup alfalfa sprouts

Instructions

  • Toss avocado wedges gently with Italian dressing; drain well, reserving dressing.
  • Spread mayonnaise evenly over 1 side of each bread slice.
  • Top 2 bread slices evenly with American cheese slices, tomato, avocado, and alfalfa sprouts.
  • Drizzle sandwiches evenly with reserved Italian dressing, and top with remaining 2 bread slices.
  • Serve immediately.
