Baba Ghanoush
This bold and flavourful Middle Eastern eggplant dish is not only tasty but also so healthy — and so surprisingly low-carb! The air fryer helps lend that smoky element to this classic dip.

- 3 teaspoons olive oil divided
- 1 medium eggplant halved lengthwise
- 2 teaspoons pine nuts
- ¼ cup tahini
- ¾ tablespoon lemon juice
- 2 cloves garlic peeled and minced
- ⅛ teaspoon ground cumin
- ¼ teaspoon salt
- ⅛ teaspoon freshly ground black pepper
- 1 tablespoon chopped fresh parsley
Instructions
- Preheat air fryer at 190°C for 3 minutes.
- Rub 2 teaspoons olive oil over both eggplant halves.
- Pierce eggplant flesh a few times with a fork.
- Place eggplant, flat sides down, in ungreased air fryer basket.
- Cook for 25 minutes.
- Transfer eggplant to a cutting board and let cool for 3 minutes until easy to handle.
- While eggplant cools, add pine nuts to ungreased air fryer basket.
- Cook for 2 minutes, shaking every 30 seconds to ensure they don’t burn.
- Set aside in a small bowl.
- Scoop out eggplant flesh and add to a food processor.
- Pulse together with tahini, lemon juice, garlic, cumin, salt and pepper.
- Transfer to a medium serving bowl.
- Garnish with roasted pine nuts, parsley and remaining olive oil.
- Serve.
