Bacon Cotija Guacamole
Cotija cheese is a popular Mexican cheese that compliments the chewiness of bacon in this guacamole.
Ingredients
Serves: 4
- 3 ripe avocados pitted and peeled
- 1 jalapeno pepper or to taste cored and finely chopped 1 tbsp fresh lime juice
- ⅓ cup chopped fresh cilantro
- ¼ tsp ground cumin
- Salt to taste
- 3 bacon slices cooked and crumbled, divided ½ cup crumbled cotija cheese
Instructions
- Mash avocados in a bowl using a potato masher or fork to your desired consistency.
- Add remaining ingredients except half of bacon and cojita and fold in well.
- Top with remaining bacon and cotija and serve guacamole.
