Bacon Cotija Guacamole

Cotija cheese is a popular Mexican cheese that compliments the chewiness of bacon in this guacamole.

Ingredients

Serves: 4

  • 3 ripe avocados pitted and peeled
  • 1 jalapeno pepper or to taste cored and finely chopped 1 tbsp fresh lime juice
  • cup chopped fresh cilantro
  • ¼ tsp ground cumin
  • Salt to taste
  • 3 bacon slices cooked and crumbled, divided ½ cup crumbled cotija cheese

Instructions

  • Mash avocados in a bowl using a potato masher or fork to your desired consistency.
  • Add remaining ingredients except half of bacon and cojita and fold in well.
  • Top with remaining bacon and cotija and serve guacamole.
