Bacon, Eggs and Asparagus

Equipment

  • Asparagus provides an innovative pop of green to this classic breakfast dish.

Ingredients

  • 1 Cup Trimmed Asparagus Spears
  • 8 Bacon Slices
  • 8 Eggs
  • ½ Teaspoon Thyme Leaves
  • 3 Tablespoon Chopped Parsley
  • 1 Tablespoon Dill
  • Salt and Pepper to Taste

Instructions

  • Cook bacon in a skillet until crispy.
  • Plate and set aside.
  • In the same pan, cook asparagus in bacon grease until tender yet crisp.
  • Add in the spices and herbs.
  • Crack eggs on top.
  • Be careful to not break the yolk.
  • When done, spoon it on top of the bacon set aside.
  • Serve immediately.
