Baked Garlic Ricotta
This has all of the richness and creaminess of a soufflé but is much more forgiving. Serve with vegetables, alongside your favourite protein or even as an accompaniment to a charcuterie tray.

- 2 cloves peeled Simple Roasted Garlic
- 1 ½ cups ricotta cheese
- ½ cup grated Parmesan cheese
- 1 large egg beaten
- ¾ tablespoon olive oil
- ¾ tablespoon fresh lemon juice
- ¼ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- 1 teaspoon finely chopped fresh rosemary
Instructions
- Preheat air fryer to 180°C for 3 minutes.
- Squeeze garlic into a medium bowl.
- Using the back of a fork, mash until a garlic paste is formed.
- Add remaining ingredients and combine.
- Spoon mixture into an ungreased 15cm oven-safe baking dish.
- Place dish in air fryer basket.
- Cook for 7 minutes.
- Serve warm.
