Baked Garlic Ricotta

This has all of the richness and creaminess of a soufflé but is much more forgiving. Serve with vegetables, alongside your favourite protein or even as an accompaniment to a charcuterie tray.

Ingredients

  • 2 cloves peeled Simple Roasted Garlic
  • 1 ½ cups ricotta cheese
  • ½ cup grated Parmesan cheese
  • 1 large egg beaten
  • ¾ tablespoon olive oil
  • ¾ tablespoon fresh lemon juice
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon finely chopped fresh rosemary

Instructions

  • Preheat air fryer to 180°C for 3 minutes.
  • Squeeze garlic into a medium bowl.
  • Using the back of a fork, mash until a garlic paste is formed.
  • Add remaining ingredients and combine.
  • Spoon mixture into an ungreased 15cm oven-safe baking dish.
  • Place dish in air fryer basket.
  • Cook for 7 minutes.
  • Serve warm.
